I want to convert the couplers on my Red Box cars as simply and cheaply as possible without any permanent altering. The Mchenry site states that "most" cars will take a #41 by simply adding a bushing made from plastic tubing over the pin. Is this the best way to go? The couplers look good and are very cheap. thanks.

I have used similar bushings on other cars and couplers with success, so in theory I don't see a reason why this wouldn't work.
Beware of McHenrys (aka Bachmann E-Z Mate) as they are cheap for a reason. The older style with the "tongue" spring were junk and easy to break and/or wear out the tension. The ones with traditional springs are better.
I've heard some people complain about the plastic being so weak that it breaks under the strain/weight of a pulled consist, but I've never had that problem.
You might also look at Accumates: they are (were?) about the same price as McHenrys but are a little more robust.
