Ok, tough question here, I'm planning to completely rework a unit to a double motor PT drive with pickup on both sides using wheelsets from the single truck switchers.

How would wiring a DCC unit to run both be done? Would it be hard or so simple I'm overlooking the obvious?

Well, with two motors, you really need two decoders so you can match their speeds via the internal software control CV's. the Virtual Circuits. Most engines don't use dual motors, so wiring them up is no problem, but now you're gonna have to have a dual decoder system if you hope to match the motor speeds together. And properly isolate the PT motor connections, too. You've picked an ambitious project to try.
