Here's a UP grain loading boxcar. It's an Athearn from the early 90's. I always thought the paint was interesting.

They would open the doors and place a temporary wood and paper wall that reaches to within about 18" of the top, across the opening. Once delivered, the cars were emptied with a hydraulic ram that bashes through the side, or the sides were pried off, then the contents were shoveled out.

Ha, you call those things boxcars??? 

 Seriously I bought this for no other reason other than I wanted one and it was cheap (5 bucks!). It can only fit on one track of the rental layout, and I had to shut the train on the inside track off just so they wouldn't bump in the turns. In the 2nd pic you can see the backed of my metal train F7, gives you somewhat of a good size comparison.

I've got one of those in SF colors that I posted a while back. It worked well or looked good on my 18"r curves, so it went on the shelf.
