I found 2 ball socket style u-joint adapters in my bone yard that would fit my ball sockets on the AC Gilbert F-7. I got the 2 MM shafts I need coming in. How can I determine I have a proper length on the shaft? I know it should have some play, just not too much!

Without a picture or diagram it's hard to say. But, if I understand correctly, one consideration for shaft length is the engagement of the u-joint with both trucks turned all the way, as if the loco is going around a very sharp curve. The u-joint shouldn't bottom out or lose engagement.
Never worked with any Gilbert locos so I don't know how the drive mechanism is designed.

Length = not too long that it bottoms out with both trucks centered, and not too short that it falls off with both trucks turned. Make sure the sockets are deep enough to allow for truck movement.
