Okay, here's a simple one for you guys.
I know to make a quote, you use the quote bracket things.
But it seems when everyone else makes a quote, it also shows who originally said what, and at what time.
Is there some other code I'm not using?

If you want the name and date, I think you just need to highlight the name and date as well as the post text, rather than just the text.

Are you using the "Reply with quote" button?
If you do, it fills in all the details for you. You cant just manually type the Quote Tags yourself. For exmaple:
